Sashi aims to create the perfect setting for sake from the novice to the connaisseur. An extensive sake list with detailed descriptions help you make a selection. For a more narrated experience, request a visit from the sake sommelier, choose to sample a flight of sakes or receive a recommendation on food pairings. We’ve also consulted with a mixologist to concoct unique sake cocktails. A carefully selected wine list complements the Sashi menu, with wines available by the bottle or glass. We also offer imported and domestic, draft and bottled beers.

sake glossary

J-Junmai

All alcohol derived from the fermentation of rice

G-Ginjo

Premium sake with a minimum of 40% of the outer rice grain polished away

D-Daiginjo

Ultra premium sake with a minimum of 50% of the outer rice grain polished away

H-Honjozo

A slight amount of distilled spirits added to make the sake more aromatic, lighter and dryer

T-Tokubetsu

Literally translates as “special”, often used with Junmai sake indicating some kind of special production

N-Nigori

Unfiltered sake, sake with unfermented rice particles floating, ranging from misty to blizzard-like

Gn-Genshu

Cask strength sake with alcohol content nearing 20%, serving Genshu on the rocks helps mellow an otherwise intense sake

Nm-Nama

Fresh unpastuerized sake – sake is pasteurized twice, once after filtration and once after bottling. A true nama goes through neither process

K-Koshu

Aged sake – when sake is aged it takes on a new life it becomes almost sherry like as it oxidizes over time

Kj-Kijoshu

Aged sake brewed using sake instead of water, this is the port of the sake world
